So I thought I could sneak another quick recipe in before the Christmas celebrations kick off. Here I have made chocolate truffles, although instead of using just dark chocolate I have thrown some milk chocolate in there as well. I do have a sweet tooth after all! Hope you all have a
fantastic Christmas and a wonderful New Year. See you in 2013.
100g milk chocolate
50g dark chocolate
100ml double cream
2 tbsp cocoa powder
½ tsp cinnamon
1. Break the chocolate up into small pieces and place in a heatproof bowl.
2. Pour the double cream into a non-stick saucepan and place on a high heat. As soon as the cream begins to boil remove from the heat and pour over the chocolate pieces, stir until the chocolate has melted and the mixture forms a ganache. Allow to cool.
3. In a small bowl, sift together the cinnamon and cocoa powder.
4. Once the ganache has cooled, using disposable gloves, roll it into small balls and then roll it in the cocoa powder mixture to coat.
